Rock Your #SundayFunday With a Kicking Breakfast

Tired of the same old breakfast? Looking for a low-calorie, healthy alternative to high-carb, fatty breakfast foods? We’ve got just the thing for you! This simple to prepare meal is less than 400 calories and will fill you up like you’ve been to Denny’s!

Regular shell eggs are 70 calories and 185mg of cholesterol. EggBeaters, we like the Southwestern variety because they have better flavor, is 20 calories and 0 cholesterol. In this example, I use the equivalent of three eggs so it’s just 60 calories for the “eggs” instead of 210.

I really like chicken sausage. I got turned onto this from going to The Flying Biscuit near Candler Park Not only does the chicken sausage taste awesome, it’s 140 calories versus 230.

The cheese is probably the biggest optional component that you could cut out if you are really trying to reduce the calories, but without the cheese the whole dish loses its appeal for me. Two healthy (pun intended) handfuls of grated cheddar cheese are roughly 240 calories.

Finally, the jalapeños are about 26 calories per cup. I don’t normally add more than a half a dozen slices so I don’t even think it measures to be a 1/4 cup.

Start by cooking the sausage in a skillet. I buy the patties versus the links. Cook the sausage until its almost done and then remove from the skillet and dice finely. Take a half a dozen slices of jalapeño out of the jar and dice them. Pour some olive oil into the skillet and add the Eggbeaters. One cup of Eggbeaters is the equivalent of about four eggs so I use 3/4 of a cup. Toss in two small handfuls of grated cheddar cheese and stir. Then toss in the diced sausage and jalapeños. Season with salt and pepper to taste, then cook thoroughly because Eggbeaters can be watery if you don’t cook them well. Once cooked, serve and enjoy! Guten appetit!
